Super Simple Sweet Potatoes

I don’t even know that this is technically a recipe because there really aren’t any ingredients other than the sweet potato and a minimal amount of toppings.  But this is the beauty of the sweet potato.  It has such a wonderful flavor that it doesn’t need much else. Sweet Potatoes are loaded with vitamin A, and they are an excellent source of fiber, vitamin B-6 and potassium.

Super Simple Sweet Potatoes

Ingredients:

  • sweet potatoes, washed with skins on (I use small ones because they cook faster and one potato makes a nice serving size)
  • olive oil
  • cinnamon
  • honey

Preheat oven to 400.  Cut ends off of sweet potatoes and place in a glass baking dish that has been sprayed with non-stick spray or drizzled with olive oil.  Drizzle tops of sweet potatoes with a small amount of olive oil.  Bake uncovered on center rack for 40-60 minutes, depending on size of sweet potatoes.  Enjoy with the skins on or removed.  Cube and drizzle with a small amount of honey and sprinkle with cinnamon.
