Autumn Apple Oatmeal

This is a wonderfully simple recipe that is quick and easy and provides a nutritious breakfast for sustained energy throughout the morning.  Oatmeal is loaded with iron and also a great source of fiber, protein, vitamin A, calcium, magnesium and vitamin B-6.  We eat oatmeal often for breakfast (and other meals) in our home, so I try to mix up the flavors from time to time.  All 4 of my kids loved this recipe.

Autumn Apple Oatmeal


  • 1 1/2 C. rolled oats
  • 3 C. water
  • 1/2 C. raisins
  • 1 small apple, diced
  • 1 tsp. pumpkin pie spice

Combine everything in a medium saucepan and cook covered over medium low heat until most of the water is absorbed (about 5 minutes).  Don’t let it cook too long because the oatmeal will turn out too dry.  When it is finished cooking, there should still be a layer of thickened water on top.  Stir and serve.  I ate it as is, but you could also top with a drizzle of honey or 100% maple syrup if you need it a tad bit sweeter.
