Trouble-Free French Toast

Another super simple recipe that works well for our family on the weekends as a break from the standard oatmeal breakfast.  This is a recipe that is made from whole foods, but it does have a small amount of powdered sugar on top.  On Sundays, we usually have French Toast using our leftover homemade Challah from Friday night.  It is a special treat, and I only make enough so that everyone has two pieces.  Remember my rule about 100%!  It’s good to give yourself a little flexibility.  Personally, I don’t think French Toast is the same without the powdered sugar.  But, you could easily top this with some yummy berries and call it a day!  I paired it with some cantaloupe.

Trouble-Free French Toast

Ingredients:

  • 8 thick slices of leftover bread of your choice
  • 2 eggs
  • 1/2 C. milk of your choice
  • 1 tsp. vanilla
  • 1 tsp. cinnamon

Preheat medium size cooking pan on medium-low  heat.  Mix eggs, milk, vanilla and cinnamon in a shallow bowl. Spray pan with non-stick spray. Dip bread into mixture and coat completely, then immediately place into cooking pan.  Cook for a few minutes on each side.  Toast should have a nice golden brown tone when finished. Top with topping of choice and devour!

*Note:  do not dip bread until you are ready to cook it – it will soak up too much mixture and get soggy.
