Raw Collard Salad

I wanted to share a simple recipe with you that I make a lot to get collard greens into my diet.  I actually don’t prefer cooked collard greens, and this recipe is for a raw collard salad!  It might sound strange at first, but trust me, it is delicious.  I slightly modified this recipe from The Garden Diet.  This is a simple salad to make, and it is very filling also.  Often I will eat it for lunch or even dinner.

Ingredients:

  • 1 bunch collard greens
  • 1/4 red onion, diced
  • handful of tomatoes, diced
  • 1 cup raw cashews
  • olive oil
  • 1 tsp. sea salt

Cut collards from stems, wash and coarsely chop.  Place in large bowl and drizzle with olive oil to lightly cover.  I never measure the oil; you just need to put enough so that the greens are moistened.  Sprinkle salt on greens and then massage together with your hands for a few minutes.  This is an important step because it helps soften the greens.  Add onion and tomatoes and mix.  Blend cashews in Vitamix on number 5 until they turn into a fine powder. Be careful not to let them mix too long because you don’t want them turning into cashew butter.  Empty over salad and mix.  Refrigerate for at least an hour before serving.  I think this salad is even better the next day.
