My kids have gone on a bit of an oatmeal strike, so when I pulled out the rolled oats this morning (we haven’t had oatmeal all week), they groaned. I was not in a creative kind of mood, and then I remembered that they love frozen blueberries and milk; LOVE it. I casually stated out loud that I was going to have my oatmeal with some frozen blueberries, but they could just have theirs plain if they wanted. Well, I got 4 quick “frozen blueberries for me”! It turned out quite tasty with a unique feel. You are eating the warm oatmeal, and then you bite into a cold blueberry. It was just what we needed though. I hope you enjoy it as much as we did!
Blueberry Oatmeal Swirl
- 1 cup rolled oats
- 2 cups water
- 1/2 cup raisins
- 1 tbsp. cinnamon
- frozen blueberries
- honey (or maple syrup)
- coconut creamer (or other creamer/milk)
Combine all ingredients in a saucepan and cook on medium low until most of the water has been soaked up. I didn’t even stir it. I turned on the burner and left it alone until it was finished cooking. Remove from stove, stir and portion out into bowls. Add the toppings of your choice, stir and enjoy!
***Honey or maple syrup is optional; it is quite tasty without any sweetener. Also, I served this like the picture above and let the kids mix their own. That was part of the fun to see the blueberries make the purplish color come alive in the oatmeal.
