I focus a lot on the kids lunches, but I also wanted to start giving some snapshots of what the grown-ups eat sometimes. Most of the time I pack similar, if not the same, things for my husband that I pack for the kids. He does occasionally get different things than the kids, and this was one of those days. I had enough lettuce left for one salad so I just kept in in the container and used that container for the salad.
- Spring mix salad topped with baby tomatoes, cucumbers, red peppers, carrots, sunflower seeds, walnuts, Tofurkey slices and cheddar cheese cubes
- side of Goddess dressing
- mixed berries (strawberries, raspberries, blueberries)
- homemade granola
