This is something I make for the kids in a couple of circumstances. When the boys have a swim meet coming up at the end of the week, I usually serve this one night during the week to help them load up on carbohydrates. I make it if I am feeling uninspired in the kitchen or don’t feel like cooking. I also make it if I am running low on groceries and can’t think of anything else to make.
- cook pasta according to package instructions
- mix in non-dairy butter or favorite pasta sauce
- mix in desired vegetables
Ideally, this will be paired with a protein. You could mix in your protein with the pasta dish, or serve it separate Tonight, the kids finished off leftover black bean soup and whole wheat biscuits to round out this delicious, nutritious, simple dinner!
