February Wrap-Up / March Madness

Well, February is behind us already.  I am a bit behind going into March, but hopefully I will make up for it!  Let’s celebrate March Madness veggie style!  This month is dedicated to the most important food for your bodies, in my opinion, vegetables!  I have spent the last few weeks eating a very clean diet consisting of mostly vegetables, fruits, gluten-free grains such as rice and quinoa and eggs.  I can tell you that I feel fantastic!  March will be a tribute to this with lots of ideas for eating more vegetables, including easier ways to prepare veggies and get them into your daily diet.

February was filled with lots of fruits and of course, no fast food!  I never could bring myself to drive through McDonald’s drive-thru.  One of my children is just about always with me, and I just didn’t want to do it.  They received more school coupons for free food from McDonald’s as a reward for work, and the focus on McDonald’s was starting to mount.  So needless to say, I just avoided the place altogether, even if my visit there would have been in the name of research!
