I wanted to make my kids some after school crackers. I had a bag of shredded cheese that I wanted to use, so I searched for a cracker recipe using dairy cheese (I always make vegan “Goldfish” crackers). I found one at 100 Days of Real Food here. I followed the recipe exactly except that I used the Vitamix to mix the ingredients instead of a food processor. I am sure this recipe would work well with Earth Balance also. It is so easy: blend 1 cup white whole wheat flour, 1 1/2 Cups cheddar cheese and 5 Tbsp. butter in a food processor or Vitamix. Shape into 2-3 round logs, slice and bake at 350 degrees on a greased baking sheet for 10-15 minutes, depending on thickness of cracker. Let cool and enjoy. That’s it, so simple!
