Well, March Madness didn’t quite go as expected. I only made a few posts because it was more like March sickness in this house. Being sick for over a month didn’t really equate to much activity on this blog. I am finally feeling like I am coming out of it, but it’s taken a while. Life must go on, even when Mama is sick! I will slowly get back into the swing of things. To officially finish off the month, I will show you a typical dinner when I am not well and lack the energy to cook and put together a meal. I want to show you that it is still possible to eat a wholesome meal at home even when the cook is sick, or life is super busy.
Seriously, this is what I serve sometimes for dinner, and you know what, everyone survives and goes to bed full! I don’t always use gluten-free pasta, but I am a fan of variety, so I throw it in every once in a while. Usually I use whole wheat pasta. This was fun because the pasta was in shapes. It’s so simple: cook the pasta, then stir in some butter and frozen peas (or some other veggie you have on hand in the freezer) while the noodles are still hot. That’s it! No excuses for fast food or take-out. There is nothing wrong with a meal like this! Actually, there is nothing wrong with a nut butter and jelly sandwich and some raw veggies/hummus for dinner. My motto is that it’s better to make something at home (even if it is simple), then to eat out all the time or buy processed/prepared food. Life is busy, but it is still possible to eat healthy!
