Recipe: Pumpkin Whole Wheat Waffles

I love cooking with pumpkin but was in need of something new, so I searched a site I haven’t been to in a while. The pumpkin waffles immediately caught my eye.  I simplified and tweaked the recipe a bit, but it is pretty much the same.  I have written my version below, and here is the original from Isa Chandra at Post Punk Kitchen.  They turned out so great; I will definitely make the full recipe next time.  I halved the original, and it made 6 large waffles.  That’s just not enough for my kids in the morning, plus I always love some leftovers to throw in the freezer.

Pumpkin Whole Wheat Waffles

makes 6 large waffles

Ingredients:

  • 1 cup unsweetened soymilk
  • 8 oz. pureed pumpkin
  • 3 Tbsp. coconut oil
  • 1 tsp. vanilla
  • 1/4 tsp. nutmeg
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda
  • 1 1/4 tsp. baking powder
  • 1/4 cup honey
  • 1 1/4 cup white whole wheat flour

Mix first 7 ingredients in large bowl.  Add in remaining ingredients and stir to combine.  Prepare waffles according to manufacturers instructions.  Top with strawberries and maple syrup or toppings of your liking.
