Organic Russet Potatoes

I am really excited to share this recipe with you.  We have french fries as a treat every now and then, but they are so expensive.  Plus, I need to buy at least two or three bags to feed our family.  Today I tried something new with making my own, and they turned out really good!  They weren’t soggy, and they had enough flavor to stand on their own.  The bag of organic potatoes was on sale for $3.49, so this turned out to be a really inexpensive dish!

  • 3 lbs. Russet Potatoes
  • 2 Tbsp. olive oil
  • 1 tsp. garlic powder
  • 3 Tbsp. nutritional yeast
  • 1 tsp. salt

Preheat oven to 425 F.  Cover 2 baking sheets with aluminum foil or wax paper and spray with non-stick cooking spray.  Wash and cut potatoes into sticks (mine were organic, so I left the peel on, but you could peel them if you wanted).  Place in a bowl and toss with olive oil.  Mix garlic powder, nutritional yeast and salt in a small bowl and add to potatoes.  Mix thoroughly.  Spread potatoes evenly over 2 baking sheets.  Bake one below the other together in the oven for 15 minutes, then switch position of the baking sheets in the oven. Bake another 15 minutes, or longer until desired crunchiness.  Add additional salt and pepper to taste.
