We had a busy morning with our 2nd Annual Tofurkey Triathlon. After the race, we indulged in some leftover pumpkin bread from yesterday (sorry no pictures, it was eaten too fast!). After getting home, I had about 2 hours left of prep work to do before we ate our meal, so I needed a light snack that the kids could constantly eat until the meal, but at the same time wouldn’t fill them up too much. Enter: POPCORN! In case you haven’t figured it out, I love popcorn! It is super easy to make, crunchy, lasts a while, and it’s inexpensive!
I thought the holiday deserved something other than the standard popcorn, so I turned to the standby for this time of year and came up with a delicious recipe incorporating pumpkin pie spice. It’s super easy, only involves a few ingredients that you probably have on hand, and everyone gobbled it up! A win win all around!
Pumpkin Pie Spice Popcorn
- canola oil
- popcorn kernels
- 3 Tbsp. butter (dairy or non-dairy, your preference)
- 3 Tbsp. honey
- 1 tsp. pumpkin pie spice (if you don’t have any, make your own!)
Place enough canola oil to cover the bottom of your saucepan (I use a 4 QT saucepan for our family of 6, with mostly the 4 kids eating the popcorn). You can use a larger or smaller saucepan to meet your family’s needs. Place enough popcorn kernels in the saucepan to cover the bottom. Cover and heat on medium. Leave alone! Listen for when the popping slows to just under 1 pop per second, then turn off the heat and remove the saucepan. Allow to sit for a few more minutes until popping is complete. Melt butter in a glass bowl. Add honey and pumpkin pie spice and stir. Pour over popcorn, add salt to taste and stir. Now enjoy!
